Banana Muffin and Cake

there's lots of recipes out there bout banana cake...as for this round, I've used premix as I've bought this earlier....so i follow on the instructions clearly but instead of muffin, i bake it as cake...bit too dry and too much poppy seeds..

Ingredients:
- 3 eggs
- 330gm ripe bananas (finely chopped)
- 150ml oil
- 500gm BANANA MUFFIN MIX (bought this premix from Bake With Yen)

Method:
- Place all ingriedients into mixing bowl and mix till just combined
- Spoon mixture into muffin mould/ tray
- Bake in preheat oven at 190C for 25 minutes (for the small ones, i bake them at 180C for 20 minutes, and the cake i baked at 190C for 45 minutes, should have set as 180C also)
- Let it cool completely before cutting the cake

Hainanese Pork Chop



Ingredients:
- Pork chop
- Egg
- Light soya sauce
- Sesame oil
- A dash of pepper
- Corn Flour (to coat meat)
- Sliced onions

- Tomatoes
- Edamame
- Corn
- Garlic


Step 1. Marinade pork chop with the above for about 30 minutes, then set aside
For sauce
- Oyster sauce
- Tomato and Chilli Sauce
- Worchestire sauce
- Sugar
- Water
Step 2.  Prepare the above ingredients and set aside
Step 3. Heat HCP with a bit of oil
Step 4. Coat meat with corn flour
Step 5. Fry in HCP, 3-4 minutes per side, depending on meat thickness
Step 6. Put aside when cooked
Step 7. Fry garlic till fragrant
Step 8. Add in onions, followed by tomatoes, edamame and corn
Step 9. Stir in sauce and let it boil, add in some corn flour to thicken the sauce
Step 10. Put the pork chop onto the sauce and simmer for awhile to let the sauce absorb to the meat
Step 11. Serve while it's hot

Coffee Muffin


erm...what's the different of cupcakes and muffin...i think should be the same la hor..anyway, i've tried premix muffin that requires to add water only..tat's very easy...so i challenged myself with scratch..find a recipe online...so i followed.just that i doubled the ingredients cos i wanted to share with my colleagues...

Ingredients:
120gm softened butter (mine not soft enough, so have to beat longer)

140gm caster sugar (should have cut down abit)
3 tbsp ground coffee mixed with 1 tbsp hot water (i added more coffee cos i love coffee, i used old town coffee)
2 eggs
300gm self-raising flour
100ml milk

Method :
1. Preheat oven to 180 degrees for 10 minutes
2. Weigh all ingredients and set aside
3. Beat butter and sugar in small bowl light and fluffy (mine wasn't light enough i guess)
4. Add in coffee mixture
5. Add in eggs and beat them until just combined
6. Sieve in flour (do in 3 batches)
7. Add in milk alternate with flour (last should be flour).
8. Pour the mixture to line cups
9. Bake for 20 mins until browned. Use toothpick to test. Make sure it comes out clean
7. Put on wire rack to let it cool before keeping. (i left mine overnight with a cloth covering it)

Ham & Bacon Bread with Bread Machine

Ingredients:
130gm chopped ham (i used SPAM)
1 handful of bacon bites
150ml cold milk
2 tbsp honey
½ tsp salt
350gm bread flour (i mixed 250gm bread flour + 100gm wholemeal flour)
1 tsp instant yeast
20gm soften butter

Method:
 - put all ingredients into bread machine as of bread machine's instructions

Apple Jam

Didn't know that cooking jam is so easy..all you need is just the fruit you like, water and sugar...for simple ones yah...you can add in other ingredients like cinnamon too...all i did was apple jam..why? cos too many apples left in fridge...instead of letting them rot and thrown away, i turned them into delicious jam..

Ingredients:
- 5 apples
- 200gm sugar
- 250ml water

Method:
a) Grate the apples till fine strips and soak in water to prevent them from turning yellow.

b) Sieve the apples strips.

c) Place all ingredients in pan except for sugar. Bring it to a boil and cook until the apples are soften.
d) Add in sugar and let it simmer. Stir constantly to mix ingredients well. Cooked till the apple and sugar gel up.

e) Cool it before packing. Put it in refrigerator.
