Cranberries Shortbread

Thanks Ah Gim from SHC for sharing the recipe. 

100g butter
50g icing sugar
150g plain flour
Handful of chopped cranberries (i soaked it with some orange juice)

1. Beat butter and sugar. 
2. Add in flour gradually. 
3. Add in cranberries. 
4. Roll dough then cling wrap it. Freeze it for an hour. Thaw it for 10 mins before slicing. 
5. Slice and lay on baking tray. 
6. Bake in preheated oven at 170'C for 15 mins. 


Emborg Butter Cookie

Recipe adapted from emborg butter. 
100g butter
40g sugar
50g icing sugar
2g salt
1tsp vanilla essence
135g plain flour
15g corn flour

1. Cream butter & sugar till fluffy. 
2. Add in essence. 
3. Add in flour. Mix well.
4. Chill dough for 30 mins. 
5. Roll small balls and slightly flattened it. 
6. Bake in preheated oven at 190'C for 17 mins.

Danish Butter Cookie (2016)

Tested this recipe again with cherry as topping. Couldn't do flower shape as it's too soft for my cookie presser. Must retry.  

1 egg
100gm butter
70gm icing sugar
150gm flour
20gm corn flour
1 tsp vanilla essence

Method
1. Place all in mixing bowl and mix well.
2. Put dough into piping bag.
3. Pipe dough on cookie sheet.
4. Bake in preheated oven at 200'C for 12 mins.
5. Leave to cool completely before storing.

Chocolate Chip Cookie (2016)

Baked again in 2016, but shaping failed big time!

150g plain flour
45g corn flour
125g butter,softened
60g brown sugar
75g castor sugar
1 egg
1/2 teaspoon vanilla extract
1/2 teaspoon baking soda
A pinch of salt
Chocolate chip

Method:
Cream butter and sugar till light and fluffy.
Add egg and vanilla extract.
Sift in plain flour, corn flour, baking soda and salt. Mix till well combined.
Add chocolate chips.
Chill dough for 30 minutes.
Roll dough into small balls. Freeze rolled doughballs for about 10 minutes.
Bake at 180°C for 20 mins.
Rest on tray for a minute before removing to cool on rack.

Coffee German Cookie (2016)

Baking german cookie again. Piping sucks as I've been neglecting cookie for some time. Gosh, gotta practise more.

Method
1. Beat butter and icing sugar till fluffy and lighter in colour. Add coffee mixture.
2. Sift in potato starch and flour, mix to form a soft dough.
3. Fill in batter to piping bag and pipe accordingly.
4. Bake in preheated oven at 170 deg C for 15 mins, upper rack (need not bake till cookies turn brown).

Danish Butter Cookie

Cookie butter revisited.

Copycat Jenny Bakery's Butter Cookie (HK)

Followed recipe by dear friend, HuiYin.
I half the recipe to test out. Taste was good but texture abit off. I think I've overmix it. 

100g butter
25g icing sugar
75g plain flour
25g corn flour

1. Cream butter and sugar till smooth
2. Sift in flour. Fold gently. 
3. Pour batter into piping bag.
4. Pipe according to desired design
5. Bake at 180'C for 15mins

Variety German Cookies


Ingredients:
125g butter
40g icing sugar, sifted
125g potato starch
80g plain flour

For Chocolate version - added 2 tbsp cocoa powder + 1tbsp water
For coffee version - added 2tsp coffee extract
For yuzu version - roughly added 2 tbsp honey yuzu (forgotten exact measurement)

Method
1. Beat butter and icing sugar till fluffy and lighter in colour.
2. Sift in potato starch and flour, mix to form a soft dough. Divide dough to 2 parts. One part added with dark cocoa powder.
3. Roll into small balls (about 2cm in diameter), arrange on lined baking pan and press lightly with a fork (dip the fork in water after each press to prevent cookie dough from sticking to the fork). Else, can fill in piping bag and pipe accordingly.
4. Bake in preheated oven at 170 deg C for 15 mins, upper rack (need not bake till cookies turn brown).

Melt in Mouth German Cookies





Ingredients:



125g butter
40g icing sugar, sifted
125g potato starch

2. Sift in potato starch and flour, mix to form a soft dough. Divide dough to 2 parts. One part added with dark cocoa powder.

White Lovers Shiroi Koibito (白い恋人)

Thanks my baking friend who have introduced this to me..love it...i should bake slightly longer as i pipe quite thick...if thinner better..should taste crunchy..very easy to make

Shiroi Koibito (白い恋人), literally means "White Lovers", also called Chocolat Blanc et Langue de Chat, is the best and well-known souvenir sweet from Hokkaido which consists of two thin butter cookies and a layer of white chocolate in between.

Ingredients:
100g (3.5oz.) butter
100g cake flour
1 egg
60g granulated sugar
240g white chocolate (i used normal chocolate instead)

Directions:
1. Draw about an inch and a half squares (leaving about an inch between) on a piece of paper.
2. Melt butter in a microwave (in a microwavable dish) and cream it in a bowl. Add granulated sugar, egg, and cake flour (sift), in order and mix well. *Yes, I added vanilla extract to taste.
3. Preheat the oven to 180C.
4. Transfer the batter to a pastry bag and snip off the end. Line a baking sheet with parchment paper, place the template under the parchment paper. Pipe out the batter in the squares (the batter will spread a little, so keep it smaller). Then remove the template. *You can bake 60 thin cookies.
5. Bake at 180C for 8 minutes. Let the cookies cool completely on the baking sheet.
6. Melt 120g white chocolate over a double boiler, line 6-inch square pan with plastic wrap (or use aluminium foil! I heard it is much easier and you may not need a square pan), then pour in the chocolate and spread evenly. Place it in the freezer to harden up a little bit. Cut it into 16 squares. *You can make 16 thin chocolates using a 6-inch square pan, so repeat the step to make 32 chocolates.
7. While the chocolate is soft, place it between two cookies. Place the cookies in the freezer to harden up completely.
