AF Chicken Floss Muffin

1 1/2 cup flour
3/4 cup sugar
1/2tsp salt
2tsp baking powder
1/3cup oil
1 egg
1/3cup milk

1. Preheat oven to 200'C.
2. Combine flour, sugar, salt and baking powder. 
3. Place oil in 1 cup measurement cup. Add in egg and enough milk to fill up one cup. 
4. Mix egg mixture with flour mixture.
5. Pour batter in cupcake mould or cups. 
6. Sprinkle with chicken floss.
7. Air fried at 170'C for 25-30mins.

Blueberry Muffin

Thanks Hui Yin for the great recipe. I think I gonna bake it again. Didn't put the correct temp and didn't fill the batter up the brim. 

80g milk
80g coconut oil
1 egg
1tsp vanilla essence
200g flour
2tsp baking powder
1/2tsp salt
80g sugar
Handful of blueberries

1. Mix milk, coconut oil, egg and vanilla essence. Set aside. 
2. Mix flour, baking powder, salt and sugar. 
3. Mix in flour mixture to egg mixture. 
4. Fold in blueberries.
5. Fill in cups till brim.
6. Bake in preheated oven at 200'C for 20-25mins

Banana Chocolate Muffin

Ingredients:

  • 2 eggs
  • 120g self raising flour 
  • 3 tsp self raising flour 
  • 100g cooking oil 
  • 100g milk 
  • 100g sugar 
  • 2 1/2 banana (mashed and also sliced)
  • 1/8 teaspoon of baking soda (optional)
  • 1/2 teaspoon of banana essence (optional) 

Method:

  1. Preheat the oven to 175'C. 
  2. Hand whisk eggs, put oil, milk and sugar until well combined. 
  3. Add in banana essence and sift in self raising flour. 
  4. Add in banana, mix well. 
  5. Pour into lines cups. 
  6. Bake at 175'C for 15-20 minutes.

Triple Choc Muffin

Ingredients (makes 12 muffins)
250gm plain flour
2 tsp baking powder
1/2 tsp baking soda
2 tbsp cocoa powder
175gm caster sugar
150gm Choc chips + Strawberry Choc Chips

chocolate rice for sprinkle
250ml milk
90ml vegetable oil
1 large egg
1 tsp vanilla extract

Method
1. Preheat the oven to 200 deg C.
2. Put the flour, baking powder, baking soda, cocoa powder, sugar, and chocolate chips into a large bowl and mix well.
3. Pour all the liquid ingredients into a bowl and mix well.
4. Mix the dry and wet ingredients together with slow and gentle strokes. Stop stirring once the last traces of flour disappear. Do not overmix.
5. Scope the batter into muffin cases.
6. Sprinkle the chocolate rice on top

7. Bake for 20 minutes or until the muffins are done

Dragonfruit Cranberry Muffin

Saw the recipe from Christine's blog and gave it a twist.
Not so successful..i think it's because dragonfruit is more watery and heavy.

 Ingredients:
- 1/2 dragonfruit, about 320 gm
- 60 gm melted butter
- 100 gm sugar
- 1 egg, beaten
- 100 ml milk
- 240 gm cake flour
- 1/4 tsp baking soda
- 1 tsp baking powder
- 1/8 tsp salt
- a handful of cranberries, lighted coated with flour


Method:
1. Preheat oven at 175'C.
2. Use a large fork or a food processor to mash the dragonfruit into paste. Add the melted butter, sugar and egg. Combine well. Stir in the milk.
3. Combine the flour, baking soda, baking powder and salt well. Sift into the banana mixture in 3 batches. Lightly combine all ingredients with a spatula or whisk between each addition. Don’t over stir the batter.
4. Mix in the coated cranberries.
5. Spoon and divide the batter into the lined muffin trays.
6. Bake in the preheated oven at 175'C for about 30 - 35 mins, or until cooked through. Test with an inserted needle that comes out clean.
7. Remove from the oven and let them cool on a wire rack.

Chocolate Moist Muffin

there's some premix flour in my store, so since mum n aunt came over to my place, i've decided to bake it as muffin for them and SIL

Ingredients:
- 170gm soften butter
- 270gm fine sugar ( i used about 200gm only)
- 3 eggs
- 270ml milk
- 1 pack of moist choc premix (i bought it from bake with yen)

Method:
- Cream butter and sugar till light and fluffy
- Add eggs 1 at a time until well combined
- Slowly add in premix alternate with milk, premix being the last
- Pour mixture to greased pan (in my case, i pour to line muffin cups and heart shape pan)
- Bake at 180'C for 40 mins

Mango Yogurt Muffin

Ingredients:

120gm vege oil (i estimated, so too densed)
140gm caster sugar (should have cut down abit)
150gm mango yogurt
2 eggs
200gm cake flour (i used 150gm cake flour, 50g plain flour)
2 tsp baking powder
1/4 tsp baking soda
150gm fresh mangoes
70ml milk

Method :
1. Preheat oven to 180 degrees for 10 minutes
2. Weigh all ingredients and set aside
3. Beat egg and sugar in small bowl light and fluffy
4. Add in oil and yogurt, mix well
5. Sieve in flour, baking soda and baking powder (do in 3 batches). Fold till just mixed
6. Add in milk alternate with flour (last should be flour).
7. Fold in cut mangoes
8. Pour the mixture to line cups (3/4 cup)
9. Bake for 30 mins at 185'C or until browned. Use toothpick to test. Make sure it comes out clean
10. Put on wire rack to let it cool before keeping. (i left mine overnight with a cloth covering it)

Banana Muffin and Cake

there's lots of recipes out there bout banana cake...as for this round, I've used premix as I've bought this earlier....so i follow on the instructions clearly but instead of muffin, i bake it as cake...bit too dry and too much poppy seeds..

Ingredients:
- 3 eggs
- 330gm ripe bananas (finely chopped)
- 150ml oil
- 500gm BANANA MUFFIN MIX (bought this premix from Bake With Yen)

Method:
- Place all ingriedients into mixing bowl and mix till just combined
- Spoon mixture into muffin mould/ tray
- Bake in preheat oven at 190C for 25 minutes (for the small ones, i bake them at 180C for 20 minutes, and the cake i baked at 190C for 45 minutes, should have set as 180C also)
- Let it cool completely before cutting the cake

Coffee Muffin


erm...what's the different of cupcakes and muffin...i think should be the same la hor..anyway, i've tried premix muffin that requires to add water only..tat's very easy...so i challenged myself with scratch..find a recipe online...so i followed.just that i doubled the ingredients cos i wanted to share with my colleagues...

Ingredients:
120gm softened butter (mine not soft enough, so have to beat longer)

140gm caster sugar (should have cut down abit)
3 tbsp ground coffee mixed with 1 tbsp hot water (i added more coffee cos i love coffee, i used old town coffee)
2 eggs
300gm self-raising flour
100ml milk

Method :
1. Preheat oven to 180 degrees for 10 minutes
2. Weigh all ingredients and set aside
3. Beat butter and sugar in small bowl light and fluffy (mine wasn't light enough i guess)
4. Add in coffee mixture
5. Add in eggs and beat them until just combined
6. Sieve in flour (do in 3 batches)
7. Add in milk alternate with flour (last should be flour).
8. Pour the mixture to line cups
9. Bake for 20 mins until browned. Use toothpick to test. Make sure it comes out clean

Chocolate Chip Muffin


I've got oven and the muffin tray, so now no excuses on failing huh?
hahahaha

Ingredients:
- 1 pack of Betty Crocker Chocolate Muffin Premix
- 125ml water
- muffin tray
- muffin cups

Method:
- mix all ingredients to mixing bowl
- whisk till well blended
- pour the batter to muffin cups, filling 1/2 of each cup
- bake at 200° C for 20 minutes
- poke the skewer at the center to check if it's done
