Natural Leavened Yuzu Cranberry Buns

Adapted from mymindpatch. Thanks Ngai Leng for introducing such combination. 

100g water
40g honey citron
25g sugar
2g salt
185g bread flour
15g plain flour
70g apple starter
Handful of cranberry

1. Prepare dough in bread machine. 
2. Let proof for first round. 
3. Deflate dough and shape accordingly. 
4. Let it proof for second round, about double the size. 
5. Bake in preheated oven at 200'C for 20-25mins.

Pandan Chiffon

Mum gave me kampung chicken eggs. So many eggs at home. Hand itchy. So there you go, pandan chiffon. This time baking using my favourite cast iron pot. Love it!


3 yolks
1tbsp sugar
30g pandan juice (self blend)
30g coconut oil
50g plain flour
10g corn flour

3 whites
50g sugar

1. Slightly beat egg yolk. Add in oil, mix well and stir in pandan juice. 
2. Sift the flour in and mix. Set aside. 
3. Beat whites till frothy then add in sugar in batches. Beat till whites become almost stiff peak. 
4. Fold meringue to yolk mixture in 3 batches. 
5. Pour batter in pot. 
6. Bake in preheated oven at 170'C for 40-50mins.
7. Flip pot upside down to cool.

Butter Chiffon using cooked dough method

Saw this from a member of P&P, been wanting to try this method since long ago    So here you go, butter chiffon using cooked dough method. I tweaked the recipe abit. So soft that after slicing, it couldn't stand. Haha. 

3 whites
45g sugar

3 yolks
45g butter
45g water + vanilla essence
54g plain flour
10g corn flour

1. Melt butter in pot. Once the side has bubble, remove from heat. 
2. Sift 2/3 of the flour in a bowl. Stir in the melted butter. Add water and mix well.
3. Add egg yolk one by one. Mix well in each addition. At last, add in the remaining 1/3 of the flour. 
4. Prepare meringue in a separate bowl. Beat the whites till frothy. Slowly add in sugar in batches and beat till stiff peak.
5. Fold the meringue to yolks in 3 batches. 
6. Pour into chiffon tin. 
7. Bake in preheated oven at 170'C for 45-50mins. I usually preheat the oven before starting to prepare ingredients. 
8. Leave the chiffon to cool upside down after baking.
9. Unmould only when it's completely cooled.

Orange Cotton Cake (Trial)

Testing out cotton cake.
Orange taste not strong enough. Will explore more. 

For now, this is the recipe. Tweaked from chiffon recipe. 


3 whites
45g sugar

3 yolks
30g oil
40g plain flour
10g corn flour
30g orange juice

1. Slightly beat egg yolk. Add in oil, mix well and stir in juice. 
2. Sift the flour in and mix. Set aside. 
3. Beat whites till frothy then add in sugar in batches. Beat till whites become almost stiff peak. 
4. Fold meringue to yolk mixture in 3 batches. 
5. Pour batter in tin. 
6. Bake in preheated oven at 160'C for 40-50mins using water bake method.

Danish Butter Cookie

Cookie butter revisited.

Copycat Jenny Bakery's Butter Cookie (HK)

Followed recipe by dear friend, HuiYin.
I half the recipe to test out. Taste was good but texture abit off. I think I've overmix it. 

100g butter
25g icing sugar
75g plain flour
25g corn flour

1. Cream butter and sugar till smooth
2. Sift in flour. Fold gently. 
3. Pour batter into piping bag.
4. Pipe according to desired design
5. Bake at 180'C for 15mins

Ochikeron's 3 Ingredients Chiffon

4 eggs
6 tbsp sugar
5 tbsp cake flour

1. Beat eggs and sugar till fluffy. 
2. Sift in flour, in two addition. Mix slowly with mixer. 
3. Pour batter into tin. 
4. Bake at 180'C for 35-40mins

* to me, it tasted more like egg cake than chiffon cake. Still prefer normal chiffon. And also i got abit pissed as my handheld whisk died on me while doing this. Ish!!!

Natural Leavened Green Tea with Salty Red Bean Loaf

Bread flour 240g
Green tea 10g
Apple starter 100g
Condensed milk 15g
Salt 3g
Cold water 120g
Butter 15g

Do as per normal bread. 


Natural Leavened Orange with Mixed Fruits Loaf

Flour 250g
Banana Passion Starter 120g
Salt 5g
Orange Juice 150ml

Do as per normal bread, but 2nd proofing slightly longer. As long as double in size

My Journey of Natural Leavened

Let's say no to commercial yeast. Thanks to sis for introducing this home baker. Went for class on 1 Aug 2015. Learnt so much bout naturally leavened yeast and starting to fall in love with it. Now I understand why some bakers don't share the recipe or tips. You gotta try on your own. Each starter has its own characteristic and each baker are different. So you gotta try on your own.

Orange Blueberry Cupcake using air fryer


125g plain flour
1.5tsp baking powder
60g sugar
1 egg
2tbsp orange juice
Zest of one orange
90ml oil
80g yoghurt
Bunch of frozen blueberries

1. Lightly whisk egg, add in juice, oil and yoghurt. Don't overbeat. 
2. Sieve in flour and baking powder. Then add in sugar. Fold gently till no flour traces. 
3. Stir in blueberries and orange zest. 
4. Pour batter in cupcake liner. 
5. Bake in preheated air fryer at 170C for 20mins.

Cream Yoghurt Cake

Recipe adapted from Sirlina Lee. 

Yolks 2
Plain flour 38g
Corn flour 10g
Oil 24g
Yoghurt 60g
Passion fruit 2 spoonful

Whites 2
Sugar 35g

Prepare using chiffon method. 
Bake in preheated oven at 170C for 15mins then 160C for 20mins. Turn off power, without opening oven door, leave cake in oven for another 25 mins. Invert cake to cool.

Honey Citron Chiffon

Ingredients:

  • 3 yolks
  • 30g honey citron
  • 20g water
  • 30g oil
  • 45g plain flour
  • 15g corn flour
  • 3 whites
  • 45g sugar

Method:

  • Dilute honey citron with water
  • slightly whisk yolk
  • Stir in honey citron water
  • Mix in oil
  • sift in plain flour and corn flour, mix well
  • whisk whites till bubbly, add in sugar in 3 batches, whisk till stiff peak
  • fold 1/3 whites to yolk mixture
  • fold in the rest of whites
  • pour batter in mould
  • bake in preheated oven at 175'C for 50mins

Cocoa Banana Chiffon

3 yolks
30g oil
90g mashed banana
1/4tsp vanilla essence
50g flour
5g cocoa powder

3 whites
50g sugar

1. Lightly beat yolk. Add in oil. Mix well. 
2. Stir in vanilla essence followed by mashed banana. 
3. Stir in sifted flour and cocoa powder. 
4. Beat whites till frothy in separate bowl. Add sugar gradually and beat till stiff peak. 
5. Fold whites to yolk mixture in batches. 
6. Pour batter into chiffon tin. 
7. Bake in preheated oven at 175'C for 45-50mins.

Mango Pudding Mix Chiffon


2 yolks
40g mango pudding mix
A pinch of salt
25g oil
35g water
50g cake flour

2 whites
20g sugar

1. Slightly beat the yolk. Stir in pudding mix till combine. 
2. Add in water stir then add in oil. Stir till combine.
3. Sift in cake flour. Combine with egg mixture. 
4. In a separate bowl, beat whites till frothy. Add in sugar gradually and beat till stiff peak.
5. Combine whites to yolk mixture in 3 batches. 
6. Pour to chiffon tin and bake in preheated oven at 175'C for 45mins.

Air Fried Marmite Chicken Wings

Seriously, I don't know how to write the recipe for air fried chicken wings. Be it in whichever flavour that I've tested cos I've never measured them. Anyway, based on estimated proportion, here's the things I remember. 

4 wings
Salt and pepper
1 tbsp vegetarian oyster sauce
2 tbsp marmite

1. Cut the wings into half. The drummette and wings part
2. Marinade with the sauces
3. Leave in fridge overnight
4. Bring to room temp, then air fry. I did it 15mins for each side bout 170'C. The last 5 mins i put to max heat so that the colour is darker.

Cranberry Bean soup in thermal pot

I used a 1.5litre thermal pot (2 pax portion)

Ingredients for soup: (agak agak)
2 pieces of pork bones with some meat
a bunch of cranberry beans (peel skin off)
Few pieces of dried scallop
3 red dates

Method:
Blanched pork bones with hot water. 
Put them in inner pot, add in other ingredients. 
Pour in hot water till 80% full and bring the whole pot to boil for about 10 mins. 
Then cover and put in the outer pot and close lid. 
I let it sit in the pot till after work. Approximately 12 hours. 
When came home from work, the soup is still warm. 
I heat it up on stove and add mee sua.
