Natural Leavened Soft Bread Loaf


Thanks NgaiLeng for the wonderful recipe. I gave it a slight tweak in the recipe as I ran out of milk. And I didn't do cold ferment.

250g bread flour
100g natural yeast starter/sourdough (i used my kombucha natural yeast)
25g fine sugar
8g vegetable oil
4g fine salt
135g cold water
1tbsp milk powder
20g butter

Following are the steps I did for this loaf.
1. Mix all ingredients except butter in bread machine.
2. Add in butter after 5 minutes of mixing.
3. Knead till the dough become smooth and shiny.
4. Take dough out from machine and let proof in a bowl cover with plastic food wrap. Let rise for 30-45mins.
5. Divide the dough to 3. Roll them up like a ball.
6. Then flatten each ball to a long strip and roll up like swissroll.
7. Put them in pullman tin and let rise till it reach bout 80% of the height.
8. Bake in preheated oven at 170'C for 45-50 mins.
9. Remove bread from mould immediately after baking.
10. Let it cool completely on wire rack before slicing.

RMB$5K Bread

5 thousand renminbi starter dough bread recipe by Victoria Moon Kua

Ingredients
Starter dough
210g bread flour
90g cake flour
24g caster sugar
6g instant dry yeast
240g water

Main dough
210g bread flour
90g cake flour
96g caster sugar
1 1/2 tsp salt
24g milk powder
90g egg
54g water
72g unsalted butter, softened

Method
- prepare a pan with base measuring 26.5 x 19.5cm, and top measuring 29.5 x 23cm. if you do not have this, you can use an 18cm square cake pan for this but utilising only 2/3 of the above recipe (I use big bowl)

- mix all starter dough ingredients dough together and allow to sit in a warm environment to rise till it looks like “honeycomb”

- mix the above with main dough ingredients except butter and knead till it is soft and non-sticky. incorporate butter and knead till it is shiny and pliable

- allow dough to rise till it doubles in size

- after dough has risen, punch dough down and WITHOUT RESTING dough, divide znd shape accordingly.

- place shaped buns into baking pan and allow to rise

- bake in preheated oven of 180 degrees C on lower rack for 12-14 mins (for buns)

Plain Loaf

At 1st wanted to do butter buns but lazy, ended with same recipe but dump all in BM for a nice bread loaf.

  • 250 gm bread flour
  • 25 gm cake flour
  • 5 gm instant dry yeast

Wholemeal Bread Loaf

this week, i added wholemeal mix to my bread loaf using Soh Pin Tee's recipe

  • 300g bread flour
  • 40g wholemeal mix
  • 50g sugar
  • 1/2 tsp salt
  • 200g cold milk
  • 1/2 tbsp yeast
  • 40g butter

Method:

  1. i put all ingredients into my bread machine and set as dough
  2. after 1hr 30 mins, i'll remove the dough from bread machine and give it a punch
  3. let it rest for another 5 mins before dividing them into 2 round balls
  4. shape as desired
  5. let the shaped dough rest for 45mins (today tested 1 hour)
  6. *brush with egg or milk (i skip this nowadays)
  7. bake them in preheated oven at 185'C for 30 mins

Simple Bread Loaf

Using same SPT's recipe. But this time round 100% done by bread machine. Texture is slightly harder. Still prefer to do only the dough with machine. Then bring out for 2nd proofing and bake in oven. Texture will be softer.
  • 340g bread flour
  • 50g sugar
  • 1/2 tsp salt
  • 200g cold milk
  • 1/2 tbsp yeast
  • 40g butter
Put all ingredients in BM and set to Medium Crust and 500gm setting.

Cappuccino Bread with Pandan Cake

Cake Mixture

  • 2 eggs
  • 150gm sponge cake mix
  • 30gm water (i replace with milk)
  • 2.5gm pandan paste (i used 1.5tsp)
  • 60gm oil

Steps:

  1. Beat eggs till fluffy.
  2. Add in water and pandan paste.
  3. Pour in Sponge Cake mix.
  4. Finally, add in oil.


After the bread dough done with 2nd proofing, pour in the cake mixture. (I used bread loaf tin)
Bake at preheated oven at 180C for 30 minutes.

Coffee Chocolate Bread (Bread Machine)





Ingredients:

1 egg (lightly beaten) + water = 225ml
100ml fresh milk
1 ½ tsp salt (I used 1 tsp)
30g caster sugar
25g butter (soften)
400g bread flour
50g plain flour
2 tsp cocoa powder
1 packet instant 3 in 1 coffee powder
1 ½ tsp instant yeast
60g chocolate chips

Method:
1. Put all ingredients to the machine according to instructions except butter.
2. I've selected Light and 1 kg size loaf
3. When BM signals, pour in the chocolate chips. 
4. I off the machine 20 minutes before it's done to avoid hard skin.
5. Remove loaf from pan once done and leave to cool completely on wire rack before cutting

Ingredients for bun dough:
250gm  bread flour/ high protein flour
  50gm  plain flour
Note: can mix the flour..sometimes i play around with wholemeal flour too..totalling of 300gm of flour
    1tsp  instant yeast
    1       egg
 60gm  castor sugar/brown sugar (can be lesser, depending on fillings)
150ml  milk
 60gm  butter

Ingredients for bun fillings (I've used):
- ham
- cheese
- hotdogs
- apple jam (homemade refer here)
- chocolate chips (added 5 June 2012)
- nugget (added 5 June 2012)
- popcorn chicken (added 9 June 2012)
- strawberry (added 9 June 2012)
- seafood tempura from shihlin (added 24 June 2012)
- Bak Kwa (dried meat) (added 1 July 2012)

Method:
Using Bread Machine:
1. Pour all ingredients in BM according to BM's instructions, except butter
2. Set BM to dough and 500gm setting
3. Add in butter after 5 or 10 minutes, once the dough is formed
4. When done, punch the dough and let it rest for 10 mins then divide dough to small portions
5. Roll the dough to desired sizes
6. Add/ Roll in preferred fillings
7. Set in pan and let them proof to double the size, bout 1 hour (i put them in oven with a bowl of hot water, changing it bout 20 mins once)
8. Preheat oven at 180C for 10 minutes
9. Brush dough with egg just before baking
10. Bake buns at preheated oven at 180C for 15-20 minutes

Enjoy your buns while it's hot..the most can keep for 3 days, else keep in fridge and reheat before eating.

- baked mini buns over the weekend for our breakfast supply for the week, didn't change recipe though wanted to try TZ but it was quite late at night, so just stick to this successful recipe.

Mango Yogurt Bread

Thanks Angela for the recipe!
Will stick to it when i make bread with Bread Machine..

Ingredients

100ml milk
1 medium egg (lightly beaten)
2 tbsp sugar (like my bread to be sweet)
1 tsp salt
300gm bread flour
75gm plain flour
2 tsp instant yeast
150gm mango flavour yogurt (I used my homemade easiyo mango yogurt)
45gm butter (soften at room temperature)
150gm mango cubes

Method:
1. Add yeast, flour, sugar, salt, yogurt, egg and milk according to the sequence in the bread pan.

2. Select light crust and 500gm, then press Start.

3. After 10-15 minutes, add in butter gradually.

4. When the machine beeps after some time, add in the mango cubes.

5. Wire cool it when it's done.
**Angela suggested to off it 10-15 mins earlier so that the crust will not turn so dark, but i forgot! will keep this in mind.

Ham & Bacon Bread with Bread Machine

Ingredients:
130gm chopped ham (i used SPAM)
1 handful of bacon bites
150ml cold milk
2 tbsp honey
½ tsp salt
350gm bread flour (i mixed 250gm bread flour + 100gm wholemeal flour)
1 tsp instant yeast
20gm soften butter

Method:
 - put all ingredients into bread machine as of bread machine's instructions

Pumpkin Bread with Bread Machine

now that i've tested the machine with 1st bread..am quite confident to try on second one..and i have some remaining pumpkin in fridge..remember seeing it from Angela's blog, i followed on the ingredients she used and after 3 hours of baking, my pumpkin loaf is successful!

Ingredients:
130g pumpkin puree
150ml cold milk
2 tbsp honey
½ tsp salt
350g bread flour
1 tsp instant yeast
20g soften butter
