Strawberry Crumb Muffin

Thanks to one of my baking kaki in MFWL, Jasmine for the lovely recipe...i like it...instead of blueberries, i replaced them with strawberries, cos the pack i bought is too sour!!

  • 190gm plain flour
  • 125gm sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 70ml oil
  • 70ml milk
  • 1 egg
  • 1 cup fruits of your choice (in this recipe, i use strawberries, cut into cubes)
  1. Preheat oven
  2. Sift flour & baking powder, then mix the sugar and salt and set aside
  3. Coat strawberries with some flour
  4. Mix egg with oil, milk and extract then fold in flour
  5. Fold in coated strawberries
  6. Fill cups with batter till 2/3 full
Optional: Crumb topping
I did 1/2 portion of original recipe by Jasmine
  • 45gm brown sugar (ran out of brown sugar, so i mix half with caster sugar)
  • 20gm plain flour
  • 27.5gm butter
  1. Mix flour and sugar then rub in butter till it resembles crumbs.
  2. Sprinkle crumbs on top of muffin batter
  3. Bake at 180 for 30mins
