Mango Orange Butter Cake

Suppose to do the cranberry cheesecake for celebration, but clumpsy me dropped the pan. RUined the cake, so i bake this last minute to replace it. Sad!

125g butter,softened
90g sugar

2 eggs
30ml juice (i used mango blended with HL Orange juice)
100g self raising flour

  1. Cream butter and sugar till pale and fluffy.
  2. Add eggs,one at a time,mix well.
  3. Add juice and flour, alternate,ending with flour, mix well.
  4. Pour into two 5" round tin.
  5. Shake them a little to even out the batter.
  6. Bake in a pre heated oven for 15 minutes at 180°C then reduce to 160°C for 10 minutes or till cooked.
  7. Remove from tin and cool on rack.
